RUM

WHAT  IS  RUM?


Rum is a distilled beverage made from sugarcane by products such as molasses and sugarcane juice by a process of fermentation and distillation
l      The distillate a clear liquid is then usually aged in oak an other casks.
l      The majority of rum products occur in and around the Caribbean and along the demerara river in south America.
l       
l      History of Rum

l      The origin of the word rum is unclear. A common claim is that the name was derived from rum bullion meaning a great commotion or uproar.
l      Another claim is the name is from the large drinking glass used by dutch sea-men known as rummers from the dutch word roemer, a drinking glass
l      Other option include contractions of the word saccharum, latin for sugar or arome, French for aroma.
l      Some of the many other names for rum are rumbullion rumbustion and rumbo.

Fermentation
l      There are 2 types of fermentation, Quick and Slow
l      Quick fermentation lasts for about 2 days and associated with light rums.
l      Light rum uses saccharomyces cerevisae at a temperature of 28-33C.
l      Slow fermentations lasts for about 12 days and associated with dark rums.
l      Double distilled to produce not rum rich in congeners and alcoholic strength 86% V/V.




Distillation
l      Light rums are distilled in patent stills. They are thus low in congeners.
l      Dark rums are distilled in pot stills. They are thus high in congeners.






Aging & blending

l      Aging is commonly done in used bourbon casks, but may also be performed in stainless steel tanks or other types of wooden casks.
l      After aging, rum is normally blended to ensure a consistent flavour. As part of this blending process, light rums may be filtered to remove any color gained during aging. For darker rums, caramel may be added to the rum to adjust the color of the final product

Light Rums
l      Light rums are also referred to as silver and white rums.
l      In general light rums has very little flavour and is suitable as a base for cocktails.
l      Light rums are sometimes filtered after aging to remove any colour.



Gold rums
l      Gold rums are also called amber rums.
l      They are medium bodied rums which are generally aged.
l      The rum can obtain its flavor through addition of spices and color, but gains its darker color from aging in wooden casks.




Dark Rums
l      Dark rums are also known as black rums.
l      It is generally aged longer, in heavily charred barrels.
l      Dark rum has a much stronger flavor than either light or gold rums.





Flavored Rums
l      These are rums which have been infused with flavours of fruits such as mango, orange, citrus and coconut.
l      These are used to flavour tropical drinks and exotic cocktails.




Over proof Rums
l      Over proof rum is a rum which is much higher than the standard 40% alcohol.
l      Most of these rums bear greater than 75% alcohol by volume and rums of 151 to 160 proof occur commonly.




Service Of Rum
l      Rum can be served straight up or neat.
l      Dark rum is also served with cola and rum.





USES OF RUM
l      White rum is best used for punches, daiquiris and other cocktail.
l      Stronger/darker rums are used in grogs, flamed dishes, cooking and patisserie.
l      Rum combines particularly well with sweet potatoes, pineapple and bananas and the meat and fish dishes that these accompany.
l      The aroma enhances sauces and marinades.
l      Rum is suitable for flaming only very tender meat, such as offal (variety meats) and spring chicken.
